I'm also thinking of replacing my 25-year-old KitchenAid mixer, and the Rival Select looks like a good machine. (650 watts is about twice as much power as my old KA mixer.) Do any of you who have them also have the Messerschmidt grain mill system to use with it? If so, do you like it and would you recommend it? What about the pasta extruder? It squeaks only when kneading in a clockwise direction, and the degree of squeaking seems to be related to humidity (more humidity = louder noise). A few times this summer, when we had the air conditioner on, the Zoji didn't squeak at all. I've noticed absolutely no decline in the quality of the bread, so I'm not going to take any action at this point to eliminate the noise. I think the answer is East Indian stores, which sell spices [and always have cardamom] for a really good price. I buy cardamom whole, in pods, and then grind it myself with a mortar and pestle if I want powder. Here's a hint for cleaning the paddle [I have a Black and Decker ABM]. I bought a baby bottle brush in the drug store and the small end, for cleaning nipples, is perfect for the opening in the paddle. I really enjoy reading the recipes and information provided in this group. Toby in Toronto. --------------- MESSAGE bread-bakers.v097.n053.12 --------------- From: "Wendy Shiao AC." In addition to the cardamom that Bonnie Pollack was looking for, I'd like to recommend another product of theirs -- crushed jalapeno peppers ($5.99 for a 4 oz. package). I especially like using them in jalapeno cornbread -- no fuss, no muss -- and they seem to hold their heat through the baking process better than canned or fresh. I just add them with the liquid ingredients (no pre-soaking). However, for those who don't have that option, I have heard many good things about a mail-order company called Penzeys. I have never used them myself, but others who have bought from them have spoken well of their quality and prices. Their catalog is available on their website at http://www.penzeys.com along with phone and fax info for contacting them. Hope this helps.
