The amount of rise seems to vary from loaf to loaf, even with the same recipe, but at least no matter what amount the dough rises, I have a loaf of bread at the end which I can slice for sandwiches. It is completely filled out from side to side but the height will vary, so the number of slices yielded varies accordingly. What happens in the case of horizontal loaves? If the dough doesn't rise as much as it should, I would think the resulting bread would be flatter, and therefore, would not produce decent sandwich slices. --------------- MESSAGE bread-bakers.v101.n028.4 --------------- From: Jack Subject: Baguettes Date: Sat, 26 May 2001 16:37:26 -0400 My baguettes look right and have the crisp crust, but there are few holes in the crumb. The one (pg. 21) listed in Linda Rehberg and Lois Conway's book, More Bread Machine Magic, tastes delicious but will not rise very much in my machine. They stated at the beginning of the recipe that it did not work great in all machines and in mine, it didn't. I would appreciate any suggestions. Although they all puff up satisfactorly, the tops are often very thin while the bottoms are thick. Other times the tops and bottoms are of equal thickness as they should be. Can anyone advise me as to what I am doing wromg?
