Courant 1997 Serving Size : 16 Preparation Time :0:00 Categories : Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups sugar 2 1/4 cups flour 1 tablespoon cinnamon 2 teaspoons baking soda 1/2 teaspoon salt 1/2 cup shredded coconut 1/2 cup raisins 2 cups grated carrots (approximately 4 large) 1 apple, peeled,cored and shredded 1 8 oz. can crushed pineapple -- drained 1/2 cup walnuts 3 eggs 1 cup vegetable oil 1 teaspoon vanilla Preheat oven to 350F. Sift sugar,flour, cinnamon, baking soda and salt into a large bowl. Add the coconut, raisins,carrots, apple, pineapple and nuts. Stir to combine. In a separate bowl, whisk the eggs with the oil and vanilla. Pour this mixture into the dry ingredients and blend well. Spoon the batter into cupcake tins lined with muffin papers. Fill each cup to the brim. Bake for 35 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool the muffins in the pan for 10 minutes, then turn out and finish cooling on a rack. These muffins need 24 hours for ripening to develop their flavor. They also freeze well. In a large bowl combine all dry ingredients (first 4) 2. In a smaller bowl, combine all remaining ingredients; stir well. 3. Pour banana mixture into dry ingredients and fold in until just combined. This is important.. do not stir, the batter should be lumpy ! 4. "This bread is really good. It can be used on the timer. On my Panasonic I use the regular cycle, but with the light crust due to all the juices in it. Makes a beautiful high rising loaf with a warm cinnamon color. Definitely use the vital gluten as it rises much better. I use frozen apple juice concentrate. You could also add raisins or chopped apples, either fresh or dried, or even nuts might be nice. Fits McD beautifully, don't you think?!"
