Date: Sat, 26 Nov 2016 10:10:33 GMT -------------- BEGIN bread-bakers.v116.n044 -------------- 001 - Joan Ross Subject: Strawberry Banana Bread Date: Sun, 20 Nov 2016 05:01:18 -0500 A tasty banana bread, where cranberries can be substituted for the strawberries too. *Strawberry Banana Bread* 2 eggs 1 cup sugar 1 ripe banana coarsely mashed 3/4 cup coarsely chopped strawberries 1/2 cup oil 3 tablespoons grated orange juice with some grated zest 2 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon ground cloves Beat together the eggs,sugar, banana,strawberries, oil and orange juice with zest until blended Combine the dry ingredients and add to the wet ingredients. Stir only until all ingredients are just moistened. Divide the batter between 3 greased and lightly floured mini loaf pans or 1 greased and floured loaf pan. Place the pan (pans) on a cookie sheet and bake at 325F for about an hour for large loaf or tested done for loaves Toothpick inserted into the middle of the bread should come out clean Cool for 15 minutes in pan and then remove from pans or pan. Wrap and let sit overnight for best flavor and texture. Sue --------------- MESSAGE bread-bakers.v116.n044.3 --------------- From: Joan Ross Subject: Cherry Tomato Foccacia Date: Mon, 21 Nov 2016 04:34:32 -0500 Colorful and delicious! *Cherry Tomato Foccacia* 1 recipe of your favorite pizza or foccacia dough good quality olive oil 1/4 cup sliced garlic 1 pint assorted colored cherry tomatoes (red, yellow, purple etc. different varities of cherry tomatoes) 1/4 cup grated parmesan cheese 3 Tbs fresh basil leaves 1 tsp coarse salt Make your dough, using your favorite recipe While dough is rising, heat 1/4 cup olive oil in skillet and cook garlic only till softened being careful not to let it burn Reserve oil and garlic. Preheat oven to 350F Brush a sheet pan with some plain olive oil Spread dough on pan to an 8 x 12 rectangle. Spread on the reserved garlic olive oil over top of dough Let dough start to rise in a warm place and when dough has just begun to rise, place whole tomatoes on surface of dough, pushing lightly to fix them in place. Then allow dough to dough rise double,surrounding the tomatoes. When dough as risen double, bake until browned or about 25- 30+ minutes. It's a great seaonal recipe that especially my vegetarian relatives enjoy plus easy to prepare in food processor. I have also prepared this using my power blender to mix the ingredients *Healthy and Delicious Pumpkin Banana Bread* 1 15 oz can pumpkin or squash 2 ripe bananas 2 large eggs 1 tsp vanilla 2 cups white whole wheat flour 1 cup quick rolled oats 3/4 cup ground faxseeds or use flaxseed meal 3/4 cup sugar 1 1/2 tsp baking powder 1/4 tsp salt 1 tsp pumpkin pie spice or 3/4 tsp cinnamon 1/4 tsp allspice 1/2 tsp baking soda Grease and flour 2 standard loaf pans Preheat oven to 350F In food processor combine pumpkin puree, bananas, vanilla and eggs and process smooth stop and scrape down sides as needed Add the flour, oats, flaxmeal, sugar, baking powder and soda, spice blend and process smooth Remember to stop and scrape sides of bowl when you prepare in food processor Transfer batter to pans Bake about 50 to 60 minutes or toothpick comes out clean in center Let cool Remove from pans Cool completly before slicing Wrap and store overnight for best flavor Freezes well Yield: 2 loaves --------------- MESSAGE bread-bakers.v116.n044.5 --------------- From: Joan Ross Subject: Tomato Bread Date: Wed, 23 Nov 2016 05:20:06 -0500 One of my favorite breads to add to my Thanksgiving bread basket. I love the flavor and color! * TOMATO BREAD* 2 cups Tomato juice 1/2 cup Tomato sauce 2 Tbs Olive oil 6 1/2 cups Flour 2 pkts Active dry yeast 3 Tbs Brown sugar 1 tsp Salt 3/4 tsp Oregano 1/2 tsp basil 1/4 tsp Rosemary 1/4 tsp Pepper 2 Cloves crushed garlic Lightly grease large bowl and two loaf pans with olive oil. In small saucepan, heat tomato juice, tomato sauce and 2 Tbs olive oil to 120F. Combine 3 cups flour with yeast and remaining ingredients. Pour in tomato mixture and beat 3 minutes. Gradually add remaining flour, mixing by hand, if necessary, until it holds together enough to turn out on floured surface. The dough is quite sticky, and you may need to add a little more flour, being careful not to add too much, or you may have a dry bread. Knead about 5 minutes, until dough is pliable and place in greased bowl, cover and let rise 1 hour. Punch dough down, let rest 15 minutes, then shape into 2 loaves,and place in prepared pans. Cover pans and let dough rise 45 minutes or until puffy Preheat oven to 375F Bake loaves 10 minutes, then reduce heat to 350F and bake 30-40 minutes longer or tested done. I got this off the Net years back and have adapated the recipe to my liking. ...Made this for Thanksgiving breakfast today, but great any time of the year. *Coconut Oil Waffles* 2 eggs 1 3/4 cup milk (I use skim milk, or enough as needed to make waffle batter consistency) 1/2 cup extra virgin coconut oil (normally it's liquified at warm room temperature ) 1 tsp vanilla flavor 2 cups whole wheat flour 1 Tbs sugar (can use Splenda for diabetics ) 4 tsp baking powder (I prefer to use aluminum free) 1/4 tsp salt Heat your waffle iron. Mix dry ingredients together Mix wet ingredients together Combine both together to make a waffle batter, adding only extra milk if need for waffle batter consistency.
