This book emphasizes healthy breads, that is why they suggest canola instead of vegetable oil, unbleached flour instead of all purpose flour, and why they add wheat germ. Boil only 3 or 4 at a time so they don't crowd. Simmer each side for a minute and return to the baking sheet. Add glazes or toppings as desired. Bake just below the middle of a preheated 400 degree oven. The book calls for 20 to 25 minutes. I usually start at 15 minutes for the 1st sheet and less for the second. These are best eaten while they are still warm. They can be frozen - you may want to slice them first so you can defost them in the toaster. Allow to sit for about three minutes. Add the flour, mixing for another three minutes. Place in a nonreactive bowl and cover. Allow to sit in a draft-free spot until it rises and gets thick and sticky. This will take about eight hours. Use a spoon to stir the sponge down before measuring for use in a bread. Once risen, refrigerate for up to three days. Allow to come to room temperature before using. If it goes beyond three days, discard all but 1 cup of the sponge and make the recipe, adding the reserved sponge with the flour. Stir for two or three minutes before using. For all of the breads based upon this sponge, allow two days since the doughs require overnight refrigeration. For the best results, use as little of the kneading flour as possible. To allow yourself to slide the loaves into the oven, form them on a baking sheet without sides or on the bottom of one with sides that is turned upside-down. If you do not have a stone or tiles, bake directly on the baking sheet(s) upon which you formed the loaves (be sure to use either cornmeal or parchment between the dough and the sheet). All of the breads based upon the sponge can be frozen for up to two weeks. Don't freeze until the bread has cooled thoroughly - then wrap in foil and freeze. When ready to use, thaw them, still wrapped, at room temperature overnight. Then, unwrap and warm at 350 degrees for 5 or 10 minutes. My wife and I are great pizza lovers and for months I was frustrated by inability to make pizza dough - manually or using the bread machine. The secret for me turned out to be only kneading for 4 minutes or so. Any more than that causes too much gluten to be produced and the bread forms a memory. You flatten it out and it springs back into a ball. The more you flatten it the faster it springs back into the ball. Whole wheat is a lot more tolerant of over kneading. The recipe is designed for "the old fashioned hand made method." I usually scale it up by 50% - i.e. 3 cups of flour. I don't increase the yeast, but everything else goes up too. I dump the dry ingredients into the machine. Then I mix the wet ones together, dump them in and press start. (Sometimes I sprinkle in a TBS or two of flour if it is tool loose. You don't want it to be too sticky whne you take it out. After FOUR MINUTES, I hit the CLEAR button to stop it. If it is warm in the room, I leave it in the machine for 30-60 minutes until it rises. If not, I take it out of the machine and put it into a greased bowl. I roll the dough around to cover it with oil, cover it with a damp towel, and put it someplace warm. After it doubles in volume, I break it into 2 or 3 pieces and form the pizza crusts. I work on a floured counter top. Avoid anything like kneading since even a small amount of manipulation will cause it to get springy. I use a pizza stone in the oven and give the pizza stone plenty of time to get really warm - maybe 30 minutes. Then I cook it for 20 - 25 minutes at 425.
