Ellen - I have found that the Hitachi is really temperature sensitive when
it comes to ingredients.   Make sure
that the eggs and milk are at room temp before you start and that may
eliminate your problem.  I found that
warming my flour to slightly above room temp helps too. (I normally store my
flour in the garage and it is
cold when I first get it out).
