Dry Bread

This is my first item on this list.  I hope someone can answer my question.
 I have been baking bread by hand for some time now and I specialize in
sourdough.  My breads tend to come out on the dry side.  I would like to
have them a bit more moist.  Any suggestions?  Should I try a lower cooking
temperature or shorter times, or both?
