Hi Gabi

By all means use the potato flour in your bread.  I have recipes that call
for 'potato' water, instant flake potatoes, and mashed potatoes.

Try substituting 1/2 c. potato flour for 1/2c regular flour.

(Potato water is the water you boil potatoes in).
