My wife came up with a most useful method for proofing. She had me take an 
ice chest that we use for camping and run an electric cord through the 
drain hole. A bulb socket is attached to the inside end and a plug on the 
outside end. A 7 1/2 watt bulb will maintain a temperature between 80 and 
90F. To prevent damage to the bottom of the chest it's a good idea to place 
a piece of styrofoam under the bulb. Also I made a simple rack out of wood 
so I'd have a double deck proofing box. Works great!!
