I got Sir Lancelot High-Gluten Flour for pizza too and am very glad I did. 
The flour is a joy to work with -- non-sticky and very stretchy and bouncy. 
It's also perfect for making bagels and bialys. Go for it if you think 
you'll use it up -- it's worth it.
