I have found that the easiest way to get a nice tangy sourdough flavor is to
simple let the dough rise twice. After the first rise, knead it down for just
a minute or two, put it back in the oiled bowl, and let it rise again until
double. This will take about half the time of the initial rise. Then punch
down, shape and proof as usual. This second rising really lets the sourdough
flavor develop!
