Potato bread & scones

There are lots of recipes here in the UK and Ireland for potato breads and
scones both oven and griddle baked, some are yeasted and some are not.  An
Irish bread baking book I have contains lots of good potato recipes - here's
one of my favourites, (slightly adapted):-

Oven baked potato cakes
Originally from: The best of Irish Breads and Baking by Georgina Campbell,
Published by Wolfhound Press Dublin

2 oz butter
8 oz flour
2 tsp baking powder
pinch salt
6 oz mashed cooked potato
buttermilk to mix

Mix the dry ingredients, rub in the butter. Add the mashed potato and mix
well. Use enough buttermilk to make a soft dough. Knead lightly on a floured
surface and roll out thickly. Cut into farls (a circle divided into thirds)
or squares. Put onto a greased baking tray and bake at 220 C (425 F) for 
about 20 mins until risen and golden brown.
Best eaten straight form the oven with butter!
