Well, yeah, Gonzo.  They are talking about that.  Go to google and type 
"flour ash content" in the search box.  Lotsa stuff there.  Maggie Glezer 
has a good definition in her Artisan Bread book, too. I'm sure you will 
receive more learned answers to your question, and while you are reading
