Can anyone tell me something about spelt.  Can it be used in place of flour 
and how does it compare with whole wheat flour nutrition wise as well as a 
substitute in baking?  I'm thinking about using more of it as I had some 
spelt pasta and though it compared favorably with whole wheat pasta which I 
normally use.
