    1                cup  mashed sweet potatoes
    1 1/2           cups  flour
       3/4           cup  brown sugar
    2          teaspoons  baking powder
    1           teaspoon  baking soda
       3/4      teaspoon  cinnamon
       1/8      teaspoon  salt
       1/4           cup  organic unsweetened applesauce
       1/2                dried cranberries -- optional
Pre-heat oven to 350F and lightly grease or line a muffin tin.
In a large bowl, combine the mashed sweet potatoes, flour, sugar, 
baking powder, baking soda, cinnamon and salt.
Add applesauce and cranberries, stirring just until combined.
Fill muffin tins about 1/3 full with batter and bake for 15 minutes.
