    2        tablespoons  active dry yeast -- (2 pkgs)
                   pinch  sugar -- or honey
    1                cup  warm water -- (105-115F)
    1                cup  warm milk -- (105-115F)
       1/2           cup  honey
    3        tablespoons  unsalted butter
    2 1/2           cups  whole wheat flour
    1         tablespoon  salt
    1                     egg
    3 1/2           cups  unbleached all-purpose flour -- to 4C, or bread flour

This is the loaf you've been looking for - nutty, slightly sweet, 
crusty whole wheat bread. It uses 40% whole grain flour and is made 
in a heavy duty mixer for easier handling of the dough.

Yield: Two 9x5" loaves

Combine yeast and sugar in water in a small bowl and let stand until 
foamy, about 10 min.

Combine milk, honey, and butter in a small bowl.

Combine whole wheat flour and salt in bowl with the paddle 
attachment. Add milk mixture, egg and yeast mixture. Beat at medium 
speed for 3 min, or until smooth. Add unbleached flour 1/2C at a time 
until a soft dough is formed. This bread can be made by hand, if you prefer.

Turn the dough out onto a lightly floured surface and knead until 
smooth and elastic, about 5-7 min, adding flour 1T at a time as 
necessary. Dough will retain a slightly sticky quality. Place in a 
greased bowl, turn once to grease top and cover with plastic wrap. 
Let rise in a warm place until doubled, 1 to 1 1/2 hrs.

Gently deflate dough. Turn out onto a lightly floured surface and 
divide into 2 equal portions. Form into oblong loaves and place in 
greased 9x5" pans. Cover loosely with plastic wrap and let rise until 
level with tops of pans, about 30 min.

Place in a preheated 375F oven and bake 35-40 min. or until crusty 
and golden. Turn out of pans to cool on a rack before slicing.
