   1                cup  all-purpose flour -- unbleached
   1                cup  rolled oats
   1         Tablespoon  baking powder
      1/2      teaspoon  salt
   1                     egg
      1/2           cup  oil
      3/4           cup  milk
      1/3           cup  honey

Preheat oven to 400F. Grease a muffin tin.

In a large bowl, whisk together the flour, oats, baking powder and 
salt. Set aside.

In a small bowl, whisk together the egg, oil, milk and honey until 
throughly combined.

Pour the wet ingredients into the dry and mix just until combined. 
Spoon into muffin cups, filling each about 3/4 full.

Bake for 15 to 18 minutes or until inserted toothpick comes out clean.

Cool in pan 5 minutes before removing to cool completely on a wire rack.

Notes: the original recipe called for olive oil, but I used canola 
oil. I baked in a silicone muffin pan on a bright metal baking sheet 
for 18 minutes at 390F (my oven is a little hot).
