1 cup whole wheat flour
1 cup old-fashioned rolled oats -- do not use quick oats
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1 pinch salt
1 large egg
1 cup Greek yogurt -- plain
1 cup unsweetened applesauce
1/4 cup brown sugar
1 tsp vanilla extract
1 apple -- peeled, cored, and grated
Fresh apples, greek yogurt, and oatmeal make these muffins delicious
and the perfect breakfast choice.
Prep: 10 minutes
Cook: 20 minutes
Total: 30 minutes
Preheat oven to 350F. Line a muffin pan with paper liners or spray
with baking spray. Set aside.
In a large mixing bowl, combine flour, oats, baking powder, baking
soda, cinnamon, and salt.
In a separate bowl, beat the egg. Add in yogurt, applesauce, brown
sugar, vanilla, and grated apple, stirring until well-combined.
Add wet ingredients to dry ingredients, mixing until just combined.
Spoon batter into 12 muffin cups, filling almost to the top.
Bake for 20 to 22 minutes, or until top is firm to the touch and
toothpick inserted into the center comes out clean.
