I was wondering if anyone used (or read?) Richard Bertinet's "Dough" or "Crust" books? If so, I'd like your take. I came across "Dough" when I started baking bread and used his method of working the dough. But after I returned the book to the library, I went more mainstream. I'd appreciate anyone's experience, thoughts. Best regards, Phyllis
