   2                     eggs
   1 1/4           cups  milk -- warmed
   1         tablespoon  butter -- melted
   2             ounces  goat cheese -- crumbled
   2        tablespoons  chives -- chopped
   1                cup  flour
   1           teaspoon  kosher salt
      1/2      teaspoon  pepper -- coarsely ground

Preheat a 12-cup muffin pan in a 425F oven for 15 minutes.

Meanwhile, whisk 2 eggs, 1 1/4 cups warmed milk, 1 tablespoon 
melted butter, 2 ounces crumbled goat cheese and 2 tablespoons 
chopped chives in a large bowl. Whisk in 1 cup flour, 1 teaspoon 
kosher salt and 1/2 teaspoon coarsely ground pepper; let rest 10 minutes.

Generously brush 8 of the hot muffin cups with vegetable oil. Fill 
the 8 cups with the batter, filling each two-thirds full, and 
sprinkle with more pepper.

Bake 22 minutes, then reduce the oven temperature to 350F and bake 
until the tops are browned and puffed, about 26 more minutes.
