Hello - Does anyone out there know of a mail order source for gluten? I have not had any luck with finding bread flour. Also, it seems that some people substitute self-rising flour for bread flour. Does this work? As I understand it self-rising flour contains baking powder and is more appropriate for non yeast breads. And one last question, I do have a local source for semolina flour (hard wheat flour for making pasta) can this be substituted for bread flour or is the grind different?
