In the grocery stores we have up here in Canada, the only "Bread Flour" I can find is a mixture of white and whole wheat flour. The package doesn't mention it has a higher gluten content then the all purpose flour. I was wondering if ALL "Bread Flour" was a mixture of white and whole wheat flours or are there some bread flours out there that are all white with added gluten. -Steve
