Rogers Flour, here in Canada, has a suggestion on the back of their bread flour bags that seems to work for me. Add one tablespoon of fresh lemon juice to your liquid, and it seems to improve the natural rising action The whole loaf seems to come out better! Wally Doren wdoren@freenet.vancouver.bc.ca
