Fill a liquid measuring cup to the 1/2 C. level
with warm water (110-115x). Dissolve 1 tsp. 
granulated sugar in the water and then 
sprinkle 2-1/4 tsp. yeast slowly over the 
surface. In 3-4 minutes, it will have absorbed 
enough liquid to activate and start rising to 
the surface. If at the end of 10 minutes, the 
yeast has multiplied to the 1-cup mark and 
has a rounded crown, it is very active. . The 
yeast mixture may then be used in your 
bread machine, if baking immediately, 
(Remember to adjust the recipe for the 
1/2 cup of water used in the test.) The same 
test may also be done using 1-1/2 tsp. yeast, 
1 tsp. of sugar and 1/4 Cup water. If at the 
end of 10 minutes, the yeast has multiplied
 to the 1/2 Cup mark, it is very active.
