Title: SWEDISH LIMPA RYE BREAD

The fennel seeds add an unusual licorice flavor to this
bread. Thinly sliced it's good enough for any smorgasbord.
1 1/2-pound loaf 1-pound loaf
1 1/8 - 1 1/4 cups water 3/4 - 7/8 cup water
2 1/2 cups bread flour 1 1/3 cups bread flour
1 cup rye flour 2/3 cup rye flour
1 teaspoon salt 1/2 teaspoon salt
1 tablespoon oil 2 teaspoons oil
1 tablespoon honey 2 teaspoons honey
1 teaspoon caraway seeds 1/2 teaspoon caraway seed
1/2 teaspoon fennel seeds 1/4 teaspoon fennel seeds
Grated rind of 1 1/2 oranges Grated rind of 1 orange
2 teaspoons RED STAR active 1 1/2 teaspoons RED STAR
dry yeast active dry yeast
Place all ingredients in bread pan and press "start".
After the baking cycle ends, remove bread from pan, place on
cake rack, and allow to cool 1 hour before slicing.
CRUST: REGULAR

This is an outstanding bread! It has a delicate, cake-like
texture and combines the orange and caraway flavors which
are popular in so many Scandinavian breads. It's also good
toasted.
1 1/2-pound loaf 1-pound loaf
1 1/8 - 1 1/4 cups buttermilk 3/4-7/8 cup buttermilk
3 cups bread flour 2 cups bread flour
1 1/2 teaspoons salt 1 teaspoon salt
2 tablespoons butter or 1 1/2 tablespoons butter
margarine or margarine
2 tablespoons honey 1 1/2 tablespoons honey
Grated rind of 1 small orange Grated rind of 1/2 orange
1 1/2 teaspoons caraway seeds 1 teaspoon caraway seeds
1/2 cup raisins 1/3 cup raisins
2 teaspoons RED STAR active 1 1/2 teaspoons RED STAR
dry yeast active dry yeast
Place all ingredients in bread pan, select a light crust
setting, and press "start".
After the baking cycle ends, remove bread from pan, place on
cake rack, and allow to cool 1 hour before slicing.
CRUST: LIGHT
