Peru Pan (Bread!) recipe request.

While visiting Peru several years ago, the dinner role
commonly served at most every meal, became a favorite
of mine.  I would like to be able to duplicate it.
The role is about palm sized, oval, has a hard crust
to the outside, and a very fluffy, almost bisquit
style inside.  You could "scoop" out the inside,
after breaking into it, and fill it with your
favorite jelly. (oh yum!)

Is anyone familar with this bread and know how to make
it?  Thank you kindly!  Gail
