Lots of people don't seem to like the Welbilt machines, but I
have had
one for two or three years, and it works just fine for me. I believe
that it has two rises rather than one, and that's ok with me because
most breads go through two rises in regular recipes. Pizza is an
exception, so when I make dough and shape the crust, I just let it sit
for 10-15 minutes rather than rise.
My only problem was having the blade stick inside the pan. It
can be
very difficult to get out. (I'm hoping they've improved this in the
model you have.)
