Thanks to all who provided information on proofing yeast. I buy it by the pound and keep it in the freezer. I had a couple of non-rising batches of bread and suspected the yeast. Yep, that was the culprit! This is the first time it's gone bad; it was only about 4 months old. Other batches of yeast have lasted at least 6 months, until I used them up.
