recipe.  Apparently, the fitches referred to an herb. "

I checked in an old English dictionary I have and they give the
explanation of the word "fitch" as: a vetch; a kind of bearded wheat.

It gives other uses for the same word, but this is maybe the explanation
that is needed for the recipe given.
