Someone asked about doughs using eggs when you wish to time the loaf in your bread machine. You can buy a powdered egg product from King Arthur to get around this; I have even seen it in my local market. OR you can use this simple substitute: 1 tbsp. soy flour + 1 tbsp. water = 1 egg. This will work nicely in many baking recipes with no discernable difference. Try it! Janine
