First , Thanks to all for the help with the diastatic malt.I now have
some.

I don't really think that malted milk powder would do the same thing,
but, hey, you never know untill you try it.

Convection oven, I had my Jenn Air covection/regular oven at Christmas,
and love it, it's wonderful for baked goods, cakes, sponges bread, best
thing I ever bought.     Glory.
