In response to Susan Cole's inquiry re: use of instant yeast - I use SAF-Instant yeast from King Arthur Flour Co. as well as Fleishmann's Active Dry and Rapid Rise Yeast, substituting 2 tsp. instant for one package of the others. I can tell no difference in the bread baked using either. Joy Alexander
