The absolute best underrated bread book I have is Martha Shulman's Great Breads. Fine variety of breads, and they all WORK, which is more than I can say for some of the famous books. She actually tests her recipes. It is out of print, but can be found fairly easily. Let me say it again: I've never had a failed recipe with her book. Jessica Weissman
