I believe that all of our confectioner's sugar does melt  - there is 
another kind used in commercial goods.  I know King Arthur Flour 
[kingarthurflour.com - they'll mail you a catalogue too if you want - its 
amazing!] has some other kinds of sugars that are specifically for this 
kind of thing - hth Cherie
