I have dietary restrictions so I make my bread with spelt flour. I have been seeking a way to make crackers (similar to store-bought saltines) with spelt and not having success. So far, all I've gotten is an extremely thin slab of seasoned baked dough, which is quite crisp (hard) and has no flakiness at all. Can anyone out there help? Thanks. JPM
