Sorry to be so late in responding to your request. I use this dough magic 
in many of my breads and it seems to work well. I would say about 2 Tbsp 
per 3 cups of flour. Also, I make this 'enhancer' up in batches and keep in 
freezer.

I think you can now find the dried whey from King Arthur Flour Co.
