I recently rennovated my kitchen, and had a DCS gas range installed. The 
oven has a "fan assist" convection feature--not a true convection oven, but 
the fan circulates air through the oven as it bakes. I love this range. The 
burners on top go from a low simmer to what we call blowtorch mode, and the 
oven bakes evenly.  Good luck with your choice, it is a big investment!
