This is in regard to Sandys question about little breads. The german word would be Broetchen or Semmel which is a bread roll or kaiserroll the closest I can think of. Black bread in german is Schwarzbrot where the main ingredient is rye flour. mostly made with sourdough. it is also called Volkorn bread whole grain bread.
