Dear Ken You asked about a use for whey when your milk sours. I make yogurt for us as well as bread, I save all of the whey from the yogurt in the freezer and defrost it to use instead of water in my basic everyday bread which is a whole wheat honey bread. I also use it in a whole wheat pita bread. Maybe someone else can tell you what to do with the curds. Good luck - Gretchen Dinin
