Allen I started the multiple rest/shortmix or knead/rest again and so on, months ago when my Kenwood died. Results have been at least the equal of machine mixing and a majority have been better. The technique really works and is extremely easy and adaptable. The stretch and fold technique, the easiest and best technique for high-hydration doughs is also immensely useful and easy . John
