Hi Larry, I found this out a few years ago when I met up with someone who was a chef. He said that the reason to use unsalted butter in some baking recipes is so YOU can control how much salt goes into the recipe. He said that salted butters can have varying amounts of salt in them. When baking sometimes the amount of salt matters and therefore use the unsalted butter and add your own premeasured amount of salt. All the best, Lynne
