I have no idea if this is like your famous zucchini cake recipe, but my
Mother made it for years and everyone loved it. You might want to give it a
try in
muffin pans.
Zucchini Cake
makes 2 loaves
3 eggs
2 cups sugar
1 cup oil (she used corn oil)
2 cups peeled, grated zucchini
1/2 tsp. vanilla
1/2 tsp. salt
3 1/2 cups all-purpose flour
2 tsp. baking soda
1/2 tsp. cinnamon
2 cups raisins
1 cup chopped nuts or candied fruit
Beat sugar, oil and eggs together by hand.
Add zucchini
Sift together salt, flour, soda and spice. Add to mixture.
Mix well and then add vanilla. Stir in the nuts and raisins.
Bake in 2 loaf pans, greased and floured, at 350 F for 75 minutes. Test
with cake tester or toothpick.
