We put the loaves to be proofed on 2 cooling racks resting on a Salton "Hot 
Tray"  <http://www.ekitchengadgets.com/wt48.html> set to heat 1 - 2 and 
cover with a cardboard box. Adequate rising occurs in 30 - 60 minutes.
