Hi Fellow Bakers, Since my wife is on a gluten-free and dairy-free diet we have been making her bread from rice and tapioca flour in accordance with a recipe from one of her special cook books. The flavor is acceptable and the dough behaves just like wheat bread except when it is taken from the oven it collapses down the middle - drastically!! Can anyone help us in solving this problem?? Thank you.
