I've refrigerated the bread and it stays just fine. I keep it out on the counter for a few days and then I refrigerate it. Sometimes it seems a bit hard afer refrigerating but then I slice it and nuke it for a second and then I toast. It is just fine after that. RisaG Risa's Food Service http://www.geocities.com/radiorlg
