So many people have written in to ask about sugar lacking in the recipe. I believe there is a law in France that applies if bread is made to sell and it is called French Bread, it can only have 4 ingredients: flour, salt, yeast and water. It contains neither sugar nor butter. The lack of butter or fat of any kind is one reason why it stales quickly, but is also the reason for the wonderful crust. Most Baguettes are small in size, so are eaten up in one meal. Gloria Martin ggmartin2@juno.com
