The best bagels I have ever made are from Peter Reinhart's book - The Bread Baker's Apprentice. I can't insert the entire recipe here but he advises mixing the dough, fermenting/ raising, then forming the bagels, which then rest overnight in the refrigerator before boiling and baking. They have the best taste and texture of any I have tried.
