I have used Peter Reinhart's bagel recipe from 'The Bread Baker's Apprentice' with great success. I use a stand mixer and the dough is very stiff and is difficult to mix. The bagels are shaped and refrigerated overnight. They are not like the bagels that you get in a bagel bakery, but I love them. Mary J. Stackhouse
