Aglaia Kremezi's Food of the Greek Islands has many intriguing bread recipes that she gives only a food processor recipe for. The technique differs from the one in Secrets of a Jewish Baker. As my food processor is too small for her recipes I have been doing her breads in the mixer, using the rest periods and order of combination she prescribes. I'm getting good results though who knows if they match the originals. - Jessica
