They're a lot like carrots, and are delicious in spicy curried dishes-- I use them mostly in two soups: http://www.well.com/user/debunix/recipes/CurriedCarrot.html and a spice-rich split pea soup, hernerakaa (sp?) from Finland. I think the recipe posted should end up a lot like a nice spicy cross between a carrot cake and pumpkin bread. --Diane
